Introduction

Ingredients

1 med head of cauliflower
1 tbsp of lemon juice
1/2 c finely chopped scallions or green onion
1 med dill pickle, chopped
1 c minced celery
1 tsp salt
dash of paprika
3/4 c Hellmann's Real Mayonnaise
4 hard-boiled eggs, chopped
Directions
Clean, wash and cut up the cauliflower. Place in steamer and steam until slightly tender and let cool.
Combine remaining ingredients except eggs in a bowl big enough to hold the cauliflower. Once cauliflower is cool to the touch, combine with remaining ingredients. Fold in chopped eggs. Chill before serving.
This is a very good recipe and one that even my kids seems to like.

Side Note: When I made this tonite, we were running short of time so I added the eggs and cauliflower before they had a chance to cool. (right from the steamer and pot!) The "potato" salad was still very tasty but there was probably more liquid than there would have been had it sat to cool/drain. Just food for thought! I like this because you get your craving for carbs (ie potato) and your veggie all in one shot. Yummy!
