Introduction

Ingredients

    1 large carrot
    1 large apple
    1 tsp. olive oil
    1 tbsp red wine vinegar

Directions

Grate apple and carrot. This is even simpler if you have a food processor. (I do not, and it takes just a couple of minutes.)
Drizzle olive oil and vinegar over the top, and mix.
Enjoy!

Note: The olive oil (and really, even the vinegar) can be left out if you'd like to reduce the calories and fat content; I just like it this way. I prefer red wine vinegar, but can absolutely see cider vinegar or balsamic being quite good in this as well. I also prefer a Granny Smith apple for its tartness and the color contrast.
