Introduction

Ingredients

    2 tbs olive oil
    .5 cup onion, chopped
    .5 lb chicken breast, boneless and skinless, chopped or cubed
    2 tbs. Panak Curry Paste (available in a jar in Asian/Middle Eastern section of grocery store).
    .75 cup water
    1 tsp garlic
    2 cups fresh spinach
    1 tomato, chopped

Directions

Heat olive oil in large skillet
Sautee onions until clear
Add garlic and chicken, cook through
Add spinach and tomato
Add water and Panak Curry Paste
Cook until spinach withers

Serve with couscous and cucumber/tomato/dill salad. I buy prepared Indian chickpeas for a complete meal. It's delicious!
