Number of Servings: 4


    2 large carrots, peeled and diced

    1 large rib of celery, diced

    1/2 large or 1 medium onion, diced

    2 cloves of garlic, minced

    1 tsp red pepper flakes (more or less depending on level of desired heat)

    2 tsp dried italian seasoning

    1 undrained can white beans (cannellini or great northern)

    4 Cups of chicken or vegetable stock

    10 oz. bag of baby spinach

    1/2 C petite diced tomatoes

    salt and pepper to taste


Makes 4 - 2 cup servings!

Lightly coat a 6 to 8 quart pot with cooking spray. Saute' carrots, celery, onion, and garlic for about 5 minutes until slightly tender. Season with red pepper flakes and italian seasoning.

When veggies are tender add stock, beans and tomatoes and bring to a boil. Simmer for approximately 5 minutes until heated through and add spinach. Stir spinach down into the soup and cook for another minute until spinach is wilted into the soup. Check for seasoning, if needed add a little salt and/or pepper to taste.

    Fantastic! I did add some crumbled lean turkey sausage and slice mushrooms to this recipe since I had them on hand. So good, my DH woke up from his nap because he kept smelling something delicious! - 6/19/11

    Made this last night for dinner & it was awesome! I used regular spinach & cut it into ribbons. Super easy & so filling. Definitely going into our rotation. - 2/8/10
