Introduction
This is a wonderful fruit medley soup which is really good served either as a meal on a hot summer day or as a starter course served with my Cajun Caressed Tilapia with Cantaloupe Salsa.This is a wonderful fruit medley soup which is really good served either as a meal on a hot summer day or as a starter course served with my Cajun Caressed Tilapia with Cantaloupe Salsa.

Ingredients

3 cups diced Cantaloupe
2 cups Orange Juice
1 ripe Mango peeled, pitted and chopped
2 tablespoons chopped Crystallized Ginger
3 tablespoons chopped Fresh Mint
Directions
In a food processor or blender, puree diced cantaloupe, orange juice, ripe mango and crystallized ginger for about 1 minute, or until smooth. Stir in chopped fresh mint until blended. Chill until ready to serve. Garnish with cantaloupe slices and fresh mint sprig
