Introduction

Number of Servings: 24

Ingredients

    Cream in bowl with handmixer:
    1 cup applesauce
    2 cups sugar
    1 Tbsp Vanilla Extract
    1 whole egg
    6 egg whites

    Sift:
    1.5 C Unbleached flour
    1.5 C Whole Wheat Flour
    1 tsp Baking Soda
    1/4 tsp Baking Powder
    1.5 tsp Kosher Salt
    1 Tbsp Ground Cinnamon

    After adding the dry to the wet add 2 cups shredded zuccini or summer squash (I blend in food processor)

    You can also add raisins, craisins and/or walnuts I didn't though so I'm not sure what that will do to the nutritional info

Directions

Mix according to stated in ingredients list. Then either split the batter into two large loaf pans or three small loaf pans. Bake at 350 degrees for 60-90 minutes or until toothpick inserted in center comes out clean. Bon Appetit.

    texture is very different, but the taste is definately still there. i doubled the vanilla and added a touch more cinnamon because i cut the sugar from 2 cups to about 1/2 cup. this was the first zuccini bread i've ever made myself and i thought it was pretty good. - 5/14/10
