Introduction

When I calculated the calories per 3/4 cup serving, I came up with 140........It's a tasty and filling side dish! I was inspired by the basic rice pilaf recipe on the back of my package of Safeway brown rice. I was inspired by the basic rice pilaf recipe on the back of my package of Safeway brown rice.

Ingredients

    1 cup brown rice
    2 Tbsp. Smart Balance Light Spread
    1 small onion, chopped
    1/4 cup finely chopped mushrooms
    2 1/4 cup chicken broth
    8 oz. frozen broccoli, cooked and chopped
    1/4 cup light sour cream
    1/4 cup shredded cheddar cheese

Directions

Saute onion in smart balance about 4 minutes on med-high heat. Add mushrooms, cook and stir 2 more minutes. Add brown rice and saute 2-3 more minutes. Add broth, bring to boil, then cover and reduce heat to low. Simmer, covered, for 45-50 minutes until liquid is absorbed and rice is tender. Meanwhile, cook frozen broccoli in microwave as directed. When rice is done cooking, stir in sour cream, shredded cheese and the broccoli. Makes eight 3/4 cup servings.
