Introduction

Same recipe, but made with unsweetened applesauce instead of oil. Makes the fat go way down! Ingredients

    3 eggs, beaten
    1 c unsweetened applesauce
    2 c granulated sugar
    (or 1 brown sugar + 1 granulated sugar)
    2 c grated zucchini squash
    1 t. vanilla
    3 c. flour
    1 t. salt
    3 t. cinnamon
    1/4 t. baking powder
    1 t. baking soda
    1 c. chopped nuts (optional--not in calories)

Directions

Combine eggs, oil, and sugar until well blended. Stir in zucchini and vanilla. Sift together flour, salt, cinnamon, baking powder, baking soda; stir into zucchini mixture. Stir in chopped nuts. Bake in 2 well-greased loaf pan at 350 degrees for 1 hour.

    I cut the sugar down to 3/4 cup and the for the eggs I used 1 whole egg and 3 egg whites. - 4/15/13

    Try adding a couple Tbls. orange, lemon or lime zest - amazing. This is the same recipe I have used for years out of a cookbook my mother gave me that she purchased to support the diabetes association. I just started substituting applesauce for the oil. - 8/12/15

    Very Good
    I cut the sugar down significantly as I a riped banana was added to the recipe. I used whole wheat flour and added some protein powder. The results was very tasty and the texture was wonderful. - 5/5/19

    I was looking for a good bread recipe that didn't use oil and this one is great. I did add ground flax seed, but I add it to all my baking. - 7/28/11
