Introduction

Lots of fresh raw chopped vegetables with a few craisins thrown in, marinated in a Raspberry Vinaigrette. Sometimes I throw in a little feta cheese on top of a serving. Ingredients

    2 cups chopped broccoli
    2 cups chopped cauliflower
    1 1/2 cup chopped cucumber (one medium)
    1 c grated carrot (approx 2 good-sized carrots)
    1/3 cup chopped red onion
    1 cup chopped spinach (I use 1/2 a clamshell of baby spinach)
    7 oz of Raspberry Vinaigrette Dressing
    1/2 cup craisins

Directions

Chop all vegetables and mix in large bowl with dressing.
Makes 8 1-cup servings.
