Introduction

i made this with left overs so it really didnt take me long. I also used low sodium light soy sauce, but there wasnt an option for this. I loved this. hope you enjoy!

* you make Quinoa by adding one cup to 1 1/4 cup boiling water. reduce heat and simmer for 15 minutes till water is absorbed.

Ingredients

    Quinoa
    baby spinich
    garlic
    curry powder
    soy sauce
    slice of lemon
    chicken breast
    olive oil

Directions

cook chicken in pan with oil till there is no more pink
add spinich and garlic. cook till spinich wilts
add quinoa previously cooked)
add curry powder, soy sauce and lemon juice
