Introduction

This is a tasty way to get your family to eat Salmon. This is a tasty way to get your family to eat Salmon.
Number of Servings: 6

Ingredients

    1 cup skim milk
    2T corn starch
    1/4 tsp salt
    1/2 tsp pepper
    1/2 tsp paprika

    2T Lemon juice
    3/4 cup lite whole wheat or multigrain bread crumbs.
    2 7.5 oz canned salmon,drained,skin and round bones removed.
    3 lg egg whites

Directions

Mix Milk and corn starch in medium saucepan until smooth,add salt,pepper and paprika,stir over medium heat until it boils then remove from heat.
Stir in lemon,bread crumbs and salmon.
Beat egg whites in a small bowl until stiff,fold into salmon mixture. Pack into 8"x4"(20x10 cm)loaf pan sprayed by no-stick cooking spray.

Bake at 350 oven for an hour to 80 mins.Cut into 6 slices.

    Very Good
    My husband and I enjoyed this salmon loaf. Very light and moist. I left out the paprika because of food sensitivity. It was still delicious. - 8/28/11
