Introduction

Ingredients

1 3/4 cups sugar
3 Eggland's best large egg
3/4 cup canola oil
2 cups peeled, finely grated zucchini
1 1/2 tsp. vanilla extract
3 cups all-purpose flour
1 1/2 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp cinnamon
Directions
Preheat oven to 325 degrees.
In a large bowl with an electric mixer, combine all ingredients.
Grease two 9" x 5" loaf pans and pour in batter.
Bake for 1 hour and 10 minutes.
Garnish loaves with zucchini peel (for decoration).
Makes approximately 10 servings per loaf = 20 servings.
*Can use 3/4 cup Egg Beaters instead of eggs and 3/4 cup unsweetened applesauce for oil, to reduce calories and fat, but you'll need to recalculate values.
