Introduction

Ingredients

1 container of fat free Ricotta cheese (15 oz)
2 cups of part skim mozzarella cheese, pre-shredded
9 whole wheat lasagna noodles
1 pound lean ground turkey
1 tbsp Italian seasoning
1 tbsp garlic powder
1 egg
3/4 large container of Ragu, traditional style
5 tsp reduced fat Parmesan cheese
1 tbsp cilantro leaves
Directions
Preheat oven to 350.
In large saucepan, cook and brown turkey on medium high heat. Break apart larger chunks of turkey. Add garlic and italian seasoning while cooking.
Meanwhile, boil noodles in large pot on medium high heat, until tender. Push noodles underwater when somewhat flexible, and turn heat to low before completely cooked. Drain noodles in strainer in sink.
In a large bowl mix the turkey with most of the ragu (leaving about 1/2 a cup), ricotta and egg.
Coat the bottom on an ungreased 9x13 inch pan with the leftover ragu.
Place 3 noodles on top of ragu. Cover with sauce mixture, 1/3 of the mozzarella then 1/3 of the parmesan. Repeat 2 more times.
Sprinkle cilantro leaves over lasagna.
Cover with foil and bake for 40 minutes.
Remove foil and bake for 15 more minutes.
Let cool for at LEAST 10 minutes.
