Number of Servings: 4

Ingredients

    2 Pork sirloin chops, cut 1/2 inch thick (approx 1.25 lbs)
    Non Stick Spray
    1/2 cup orange juice
    1 Tbs honey
    1 tsp Curry Powder
    2 oranges
    2 tsp cornstarch
    1 Tbsp cold water
    1 Tbsp snipped parsley

Directions

Trim separable fat from chop, cut each chop in half. Spray a large skillet wih nonstick spray. Pre heat skillet over medium high heat. Add pork chops, brown on each side. Drain fat. Add orange juice, honey and curry powder to skillet. Bring to boiling. Cover and simmer 30 to 40 minutes or until chops are tender and no longer pink in the center. Remove pork chops; keep warm. Meanwhile, peel oranges. Slice in circular pieces, sliced in half. Set aside. Stir together cornstarch and water; stir into skillet. Cook and stir until thick and bubbly. Cook and stir 2 minutes. Stir in oranges and chives. Heat through. Spoon over pork chops. Serves 4.
