Great versatile recipe, easily modified for use and/or taste. I add finely diced green and red bell peppers, garlic, and sprinkle of crushed red pepper. Also, sometimes use no-sodium salsa instead of tomatoes. Family loves it served with breakfast egg dish; and at other meals with other dishes - 12/14/10

I love making this in the summer. It keeps for days in the fridge, so I make enough for 8-10 servings. I'm not overly fond of cold salads in the dead of winter, though. Brrrrr! - 12/15/10
