Hearty mildly spicey soup. Great on a fall evening with whole grain bread on the side. Hearty mildly spicey soup. Great on a fall evening with whole grain bread on the side.
Number of Servings: 3


    1 Tablespoon olive oil
    1 medium onion, finely minced
    1/2 lb fresh mushrooms, thinly sliced
    2 Tablespoons flour
    1 teaspoon curry
    4 cups vegetable stock
    2 cups pureed pumpkin
    1 can evaporated skim milk
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 teaspoon nutmeg
    1 Tablespoon honey


Saute onion and mushrooms in olive oil until soft. Add flour and toss til well coated. Add curry and toss again, cook for 1 minute stirring constantly. Add broth and stir until well combined. Cook until gently boil for 3 minutes or until thickened. Add rest of ingredients and blend well. Heat thru and serve. If soup is too thick, you can add more broth, milk or even just a little water. Serves 3
