This recipe originally came from the Frugal Gourmet. It is better than any canned soup and freezes well too. If fresh tomatoes are not available, canned will work, just be sure to use whole, peeled tomatoes. This recipe originally came from the Frugal Gourmet. Ingredients

8 large, ripe tomatoes, roughly chopped
1 tsp olive oil
1 tbs butter
1 quart good quality chicken broth, homemade or canned
Directions
Place a heavy soup pot on medium heat, coat bottom with olive oil then put the butter in the pot. When the butter has melted, add the tomatoes and cook, stirring often, until the tomatoes are soft and the skins begin releasing from the flesh. Mash the tomatoes with heavy spoon then add the chicken broth. Cook for 20 min. The soup can be strained to remove the seeds and skins. Season to taste with salt and pepper or Natures Seasoning Blend. Herbs can be added and ravioli or tortellini to make an Italian style soup.
The soup is not thick but is very filling.
Makes 6 1-cup servings.
