    1/2 stick (4 T) margarine
    1 medium onion, chopped
    3 stalks celery, chopped
    2 tsp minced garlic
    6 cups chicken broth
    2 cans sweet corn, undrained
    1 can cream corn
    1/3 c flour
    1 1/2 T creole seasoning
8 oz cooked crawfish tail meat
1 can crab meat (6.5 oz) undrained
    1/4 cup skim milk
1 cup fat free half and half

Saute onion, garlic, and celery in butter until soft, adding chicken stock as necessary to prevent over-browning. Add corn, cream corn, creole seasoning, and remaining chicken broth and bring to a boil. Mix 1/3 cup flour with half and half and milk and stir until smooth. Add to soup and stir until thickened. Simmer 15 minutes. Add crab meat and crawfish and simmer another 5 minutes. Makes about 8 two-cup servings.

Made this tonight and my husband and his best friend couldn't get enough. It was an amazing meal. My husband said that next time we have to triple it and freeze the left overs. - 5/1/10
