Ingredients

    1/2 stick (4 T) margarine
    1 medium onion, chopped
    3 stalks celery, chopped
    2 tsp minced garlic
    6 cups chicken broth
    2 cans sweet corn, undrained
    1 can cream corn
    1/3 c flour
    1 1/2 T creole seasoning
    8 oz cooked crawfish tail meat
    1 can crab meat (6.5 oz) undrained
    1/4 cup skim milk
    1 cup fat free half and half


Directions

Saute onion, garlic, and celery in butter until soft, adding chicken stock as necessary to prevent over-browning. Add corn, cream corn, creole seasoning, and remaining chicken broth and bring to a boil. Mix 1/3 cup flour with half and half and milk and stir until smooth. Add to soup and stir until thickened. Simmer 15 minutes. Add crab meat and crawfish and simmer another 5 minutes. Makes about 8 two-cup servings.
