Introduction

I make this when I have some calories left at the end of the day and am craving something rich. I use only on slice of bread to cut the carbs. I make this when I have some calories left at the end of the day and am craving something rich. I use only on slice of bread to cut the carbs.

Ingredients

    1 slice sprouted rye seed bread (Alvarado St. Bakery)
    1 mozzarella string cheese
    1/2 tbsp. pesto sauce
    4 small slices tomato

Directions

Heat oven to 375 degrees. Spread the pesto sauce on the bread. Place the tomatoes on top of the pesto. Pull apart the string cheese and spread evenly over the tomatoes. Bake in the oven for about 10 minutes (you want the cheese bubbly and the tomatoes heated through, so keep an eye on it.). Makes 1 serving.

By the way, if you want a more traditional "grilled cheese" you can cut the bread in half, assemble and cook in a dry skillet. I press the sandwich flat with the bottom of another pan and cook it panini style.
