Introduction

Ingredients

    1 Cup cooked Whole Wheat Pasta
    1/4 Cup Sundried Tomatos
    1 tsp Salt
    1 tsp Pepper
    1 tsp Oregano
    1 tbsp Extra Light Olive Oil
    1/2 Clove Garlic
    1/4 Cup Scallions
    3 oz Cooked Shrimp(you can buy a bag of frozen shrimp at any supermarket, make sure its defrosted before you use it)

Directions

Prep:

Slice up Scallions, Mince Garlic, Boil Pasta, Defrost already cooked shrimp if needed.

Instructions:

In small frying pan on the stove, at medium heat, coat the bottom of the pan with the Extra Light Olive Oil. Then sprinkle the salt, pepper, and oregano evenly over the oil. Next add the garlic, scallions, and sun dried tomatos. Let the garlic soften and sun dried tomatos to cook. This should only take about 5 minutes at the most. When that is done, add in the cooked pasta and mix well so that the spices coat the pasta. This should only be another minute or so. Then add the already cooked shrimp, and let heat up for about two minutes. Don't let the shrimp stay in too long, otherwise it will shrink. Make sure everything is well mixed and enjoy!

Substitutions/Suggestions:

If you do not like shrimp, you can use steamed broccoli. Also, to add a different flavor to it, you can sprinkle fat free grated parmesan cheese on the top.
