Ingredients

Broth, Vegetable, .5 cup
Trader Joes Soy Milk, 1 cup
Carrots, raw, 1 large, diced
Onion chopped raw onion, 0.5 cup, diced
Mushrooms, fresh, 1 cup, pieces or slices
Best Choice French Cut Style Green Beans, 2 cup
Water, tap, .25 cup
Corn Starch 2-3 Tablespoons
Vegan french Fried Onions, 1 small canister
Directions
1. Put Vegetable Broth and Soy Milk in a saucepan over low heat until Milk is warm but not scalded. Remove from heat.
2. In a separate skillet, saute the onion, carrots, and mushrooms.
3. Cut corn starch into cold tap water. Pour into the warm milk mixture, stiring until thick.
4. Add vegetable mixture, Green Beans, and one-half of the French Fried Onions. Pour into a oven safe casserole dish. Top with remaining Fried Onions.
5. Bake at 350 15-20 minutes. Allow to cool for five minutes before serving. Makes 4 servings.

I have been using this recipe for 3 years now The only change I make is I use rice milk instead of soy milk! My family dinner has to be: kosher meat, dairy free, soy free, nut free, and sugar free. The 1st year I made one dish of this casserole, but it was so loved now I make 3 each time I cook it - 12/13/13
