OMG this is exactly what I was looking for! I wanted to thick, creamy soup that was not filled with fat and this was perfect! My husband couldn't stop eating it! The only changes I did was added 1/4 cups of minced carrot for a little color and sweetness. I also used frozen broccoli! - 1/11/16

Would never use processed cheese like velveeta. Used real cheddar cheese. Could use Jalapeno Jack for a more spicey soup. - 9/15/15

This was a great recipe! So easy and quick to make. I altered it slightly and doubled it and I still had it done within 45 minutes start to finish. I used cheddar cheese since we don't really like Velveta. Otherwise, great!!

This was very good, I skipped puree, used 4 oz of 2% Velveeta, all I could find and the rest fat free shredded cheddar. 1/2 a cup is just not enough! - 11/20/13

I made this recipe this weekend for a craft party - it was so good! I used vegetable broth instead of chicken broth becuase my friend is a vegetarian. It was a little sweeter, but still good! - 1/24/11

Sounds good. I would assume the sodium is from the Velveeta. Question, who eats soup by the 1/2 cup? Seems like an unrealistic portion size. - 12/9/10

  • This was awesome! I loved it! Quick and easy to make and very filling. I recently got 64 ounces of broccoli florets and this recipe came in handy. My next batch I will double the recipe and save some for later. - 4/27/16

  • I pondered this recipe. I am a vegetarian. Easy enough to adapt by using vegetable broth and plain almond milk, but it completely lost me when it said "Velveeta" regular, light, or otherwise. Velveeta is processed garbage food. UGH! I won't even consider this recipe now. - 3/28/16

  • Hey, this was pretty good! I was attracted to it's simplicity and was pleasantly surprised. I doubled the recipe & made it to the letter. It was just a tad sweet (was it the Velveeta 2%?) so next time I might try shredded sharp cheddar instead but I will be adding this to our regular meal rotation. - 3/25/16
