Ingredients

    cooking spray
    1 cup chopped onion
    2 garlic cloves, minced
    3 cups fat free, less sodium chicken broth
    1 (16oz.) package brocolli florets
    21/2 cups skim milk
    1/3 cup all purpose flour
    1/4 tsp. black pepper
    8oz. velvetta light

Directions

Heat a large nonstick saucepan coated with cooking spray over medium high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium high heat. Reduce heat to medium; cook 10 minutes. Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to the broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese, stirring until cheese melts. Place 1/3 of the soup in a blender or food processor, and process until smooth. Return purred soup mixture to pan. Makes 12 1/2 cup servings.

    Would never use processed cheese like velveeta. Used real cheddar cheese. Could use Jalapeno Jack for a more spicey soup. - 9/15/15

    OMG this is exactly what I was looking for! I wanted to thick, creamy soup that was not filled with fat and this was perfect! My husband couldn't stop eating it! The only changes I did was added 1/4 cups of minced carrot for a little color and sweetness. I also used frozen broccoli! - 1/11/16
