Ingredients

1 pound hamburger, 85:15
1 cup of diced bell pepper, green
1 medium onion, diced
1 cup of dry rice
1 can Salt Free (or low sodium) Stewed Tomatoes
4 TBL Pace Picante Sauce, Mild (or Medium or Hot)
4 cups water
Tips
'Italian' Variation - Instead of Stewed Tomatoes, use one can of Low Sodium Italian Stewed tomatoes. Sprinkle with Parmesan at table. Sodium content increases slightly. Calories will vary by amount of Parmesan cheese used.
Directions
Brown hamburger in a large pot until all pink is gone. RemoVe from heat, place in a colander and thoroughly rinse with hot Water.
Wipe pan to remove any cooked fat remaining.
Place all other ingredients in pot, then add rinsed hamburger.
Bring to a boil then reduce to a simmer until rice is done (about 20 minutes). Thoroughly stir mixture at about 5 minute intervals.
When rice is done, remove from heat and let rest for 5 minutes.
Most people will need additional salt and/or pepper or more Picante Sauce. Those contents have not been considered in totals.
Makes 8 1-cup servings
