Introduction

These are the perfect snack when you just want a burger & fries. It's a sweet & spicey treat! These are the perfect snack when you just want a burger & fries. It's a sweet & spicey treat!

Ingredients

    1 medium sweet potato
    1 T. extra light olive oil
    1 T. taco seasoning (or to taste)
    1 t. cayenne (or red) pepper (again, more or less to taste)

Directions

Turn over onto broil (500). Peel and slice 1 sweet potato approximately the size of your fist. Place slices in a zip lock bag. Add 1T. olive oil. Seal & shake. Add taco seasoning & cayenne pepper (the more you make these, the easier it gets to figure out the amount of spice you want it to have). Seal & shake. Line cookie sheet with tinfoil and spread sweet potatoes into a single layer. Place in oven and watch carefully. I like mine to be a little crispy on the edges. If you'd like them to be crispy on both sides, turn the slices over half-way through cooking. I enjoy mine with some low-carb ketchup. Mmmm!! Such a great treat and side dish too!
