You can view the original recipe there as well as instructions on how to make fresh pumpkin puree.This is a thick, hearty chili and a great Fall/Winter dish. This is a thick, hearty chili and a great Fall/Winter dish. You can personalize it by adding other vegetables, adjusting the amount of chili powder, and adding red chili flakes.

Ingredients

2 cups canned or fresh pumpkin
3 pounds lean ground turkey
2 cans red kidney beans
2 Medium onions, Chopped
3 cans diced tomatoes
2 tablespoons Chili Powder
3 Packets Splenda
1 teaspoon salt
2 large bay leaves
1 cup canned mushrooms (optional)
1/4 teaspoon Red Pepper Flakes (optional)
Directions
1. Brown and drain ground turkey.
2. Add all the ingredients together in a large pot and mix together.
3. Simmer on low for about 1-2 Hours

2. Add all the ingredients together in a large slow cooker (6-7 quart) and mix together.
3. Cook on low for 6 hours
This recipe makes about 11 1 cup servings.
You can serve with crackers or a hearty bread. I'm in Hawaii, and we eat rice with everything, so I like this over 1/2 cup of brown rice.
