This is another recipe for roasted veggies (use any that you have and like) but with the addition of apples and bananas. The bananas add a wonderful flavor to the veggies. Ingredients

    Any Vegetables such as:

    Sweet potato - cubed
    White potato - cubed
    Yellow Squash - sliced
    Zucchini - sliced
    broccoli - cut up
    Peppers - sliced
    Carrots - sliced
    1 or 2 apples sliced
    1 or 2 bananas chunked
    salt
    pepper
    any dried spices you like
    garlic


Directions

Serving size depends on the amt and size of veggies.

Preheat oven to 400. Mix olive oil and spices in roasting pan and then add all the veggies, mixing well. Bake in the oven for 30-45 minutes stirring once in awhile and checking to see if the veggies are finished. The potatoes usually take the longest. Bananas will kind of melt away and become part of the flavor.
