    1 cup flour
    3/4 cup uncooked quick cooking oats
    1 cup brown sugar
    1/2 cup melted butter
    1 teaspoon cinnamon
    4 cups diced rhubarb
    1 cup sugar
    2 Tablespoons cornstarch
    1 cup water
    1 teaspoon vanilla


Mix first 5 ingredients until they crumble.
Press half of the crumbs into a greased 9 inch square pan.
Add diced rhubarb.
Combine remaining ingredients and cook until thick and clear.
Pour over rhubarb.
Top with remaining crumbs.

Bake at 350 degrees for 1 hour. Cut into squares and serve while warm with whipped cream.

  • Just got some rhubarb from a friend and looked up a rhubarb crisp recipe and this yummy one came to my attention. Made exactly as is; and the family loved it! Sugar is a little high, but for a yearly spring treat, I was willing to enjoy the full flavor with balance!! - 5/6/12
