Ingredients

-A piece of ginger root, finely chopped (optional)
-A few cloves of garlic, finely chopped
-Low sodium chicken broth, two boxes (approx. 1.8L)
-Whole wheat pasta, 1/2 cup (or more if you like)
-Two carrots, sliced into 1/2" rounds
-Three celery stalks, sliced into 3/4" chunks
-Frozen peas, 1 cup
-Onion, 1/2 cup chopped finely
-Two tomatoes, chopped coarsely
-Handful of fresh cilantro, chopped coarsely
-Dried or fresh oregano, 2 tbsp
Directions
Heat some olive oil in the large pot you'll be using for the soup. Dice chicken. Season to taste. Chop one clove of garlic and brown chicken with the garlic. Once done, remove from heat and set aside in a bowl.
In the pot (with the leftover oil from the chicken) place the chopped onion, remainder of garlic and chopped ginger. Cook over medium heat for about three minutes.
After three minutes, add broth, celery, carrots, dry pasta, peas, tomatoes and oregano to pot. Cover, bring to a boil. Let boil for about 8 minutes to cook pasta and mix flavours.
After 8 minutes, add cilantro, lower heat to a simmer. Let simmer for about 3 or 4 minutes.
Enjoy with some whole wheat crackers! Makes four massive bowls of soup (for the really hungry) or about six normal bowls. : ) Nutritional values are for six servings.
