    5 oz chicken breast
    1 tablespoon cornstarch
    1/4 fat free egg substitute
    2 tbs finely chopped almonds


1) Sprinkle each side of the chicken breast with cornstarch. Dip the breast into the egg substitute to coat and then sprinkle with almonds

Coat a small nonstick skillet with nonstick cooking spray and heat over med heat. Cook the chicken for 5 min on each side or until a thermometer inserted in the thickest part registers 165F.

  • Excellent! Did it in the oven though rather than stove top - 350 degrees for 30 minutes, and sprayed the top with PAM as well. Thanks for sharing! Will most certainly enjoy my leftovers at lunch tomorrow!
