Introduction

Ingredients

    Fresh Ground Wheat Flour, Salt, Filtered Water, Honey, Yeast, Olive Oil, Lemon Juice

Directions

In a cup add water, honey, and yeast to "Proof"

In the Vita-Mix 5200 Dry blade container, Add 1 3/4 Cup Wheat Berries and 1 tsp Salt.

Start on Variable Speed #1, dial up to 10 then switch to High. Blend for a minute, until it is a fine flour. It will have a well (or hole) in the center, now you can add the proofed yeast, etc. Add the Lemon juice and Oil.

Switch On HIGH for 1 Second,
scrape the sides

On and off quickly, 5 Times (like pulse)
Scrape the sides,
repeat 4 or 5 times until dough is mixed.

Turn out into a greased bread pan

Let rise in a warm place for 10-15 minutes, until dough reaches top of loaf pan.

Bake on 350 for 30-35 minutes

I slice thin, 22 slices per loaf. :)
