It's important to save any juices while cutting the vegetables very thin. If you use a mandolin, put a plate under to catch drips and add it to the salad. This works great with winter tomatoes. Ingredients

    1 medium onion
    1 medium green pepper
    2 large tomatoes
    1 large cucumber, peeled
    3 stalks celery
    3 tablespoons white vinegar
    1 tablespoon olive oil
    1 teaspoon salt
    1 teaspoon sugar
    1/4 teaspoon chili powder

Directions

Run all the vegetables through the food processor using your slicing disc. If using a mandolin, catch juices and put into a large glass bowl with sliced veggies.
Mix vinegar, olive oil, sugar, salt and chili powder. Pour over vegetables and mix. Cover and refrigerate for at least two hours. Stir before serving. Makes 6 servings.
