Ingredients

    Chicken Breast, no skin, 21 ounces sliced into strips
    Red Onions, raw, 1 cup, chopped
    Garlic, 10 cloves, chopped
    Jalapeno Peppers, 1 pepper minced
    Peanut Oil, 2 Tbsp
    Salt, 2 tsp
    Pepper, red or cayenne, 1 tsp
    Pepper, black, 1 tbsp
    Soy Sauce, 4 tbsp
    Molasses, 2 tbsp
    Honey, 1 tbsp
    Assorted Summer Squash, 4 cups cubed
    Mushrooms, fresh, 1 cup, sliced




Directions

Heat Oil in a large skillet or wok over medium high heat
Add chicken, onion, garlic, and jalapenos and cook unil chicken is almost cooked through
Add salt, black pepper, cayenne, soy sauce, molasses and honey and stir to coat
Add squash and mushrooms and continue stirring until squash is cooked through but still firm.
Serve with steamed or brown rice.
