Mmmm. These are delicious and lower in fat than many brownie recipes... almost like a combination banana bread/brownie. Definitely more cake-like than fudge-like. Mmmm. Ingredients

    1/4 cup bananas, mashed
    1/4 cup canola oil
    2/3 cup sugar
    1 tsp vanilla
    2 large eggs
    1/2c self-raising flour
    6T cocoa powder
    1/8t salt

Directions

Preheat the oven to 350F and grease a 9x9" pan lightly.

Combine the bananas, butter, sugar, vanilla, and eggs until smooth. Then add the flour, cocoa, and salt, and stir until combined.

Pour the batter into the prepared pan (it will be pretty liquidy) and place in the oven on the middle shelf. Bake for 30 to 35 minutes, until the brownies just begin to pull away from the side of the pan.

Let cool, then cut into 16 brownies.
