Introduction

These carrots are yummy with cinnamon-cumin lentil dal (sometimes available prepared at Whole Foods) and basmati rice. Sprinkle it all with pumpkin seeds. Ingredients

    3 c carrots
    1 tbsp Earth Balance Natural Buttery Spread
    1 t minced ginger
    .25 cup Orange Juice
    2 tsp Brown Sugar

Directions

Peel and slice carrots into coins.

Combine carrots, butter spread, ginger and juice in a nonstick saucepan.

Bring to a boil, then cover and simmer 10 minutes. Test to see if carrots are al dente.

When carrots are tender, uncover and boil off remaining liquid. Add brown sugar and cook just to blend.
