Number of Servings: 12

Ingredients

2 1/4 cup of all purpose flour
    2 t. baking powder
    1 t. salt
    2 t. vegetable shortening
    3/4 c. hot water

Directions

Preheat griddle.
Mix all dry ingredients in a large bowl.
Add vegetable shortening and mix by hand until incorporated.
Slowly add hot water and adjust with extra flour or water if dough is too sticky or too dry.
Mix for approximately 5 minutes. Once dough comes together, turn dough out onto floured board.
Knead a couple of times until it becomes a large ball. (Don't over knead or dough becomes tough!)
Divide dough into 12 equally sized balls.
Roll balls into approximately 6" circles (Roll on a lightly floured surface so they don't stick.)
Place on hot griddle. Cook about 30 seconds on each side or until desired brown-ness.
