Number of Servings: 8

Ingredients

    5 Red Sweet peppers cut in pieces
    5 medium tomatoes
    3 cups vegetable or chicken broth
    1 large sweet onion
    3 cloves of garlic crushed
    2 TBSP olive oil
    3 TBSP balsamic vinegar
    3-4 fresh basil leaves
    1 TBSP cilantro chopped

Directions

Pre heat oven to 350 degrees. Cut tomatoes, peppers, onions, crush garlic cloves. Place all vegetables in large bowl. Add olive oil, vinegar, cilantro and basil leaves. Toss vegetables. Place vegetables on edged cooking sheet. Cook vegetables for 40 minutes. After cooking you can mix in food processor. I prefer to put large pot, add chicken or vegetable broth and used an electronic hand blender. Mix until desired consistency chunky or creamy. Heat all ingredients together for 20 minutes
