Ingredients

4 oz. cream cheese, softened
5 oz frozen chopped spinach, thawed, well drained (usually comes in a 10 oz package)
1 1/4 cups shredded mozzarella cheese, divided
6 Tbsp grated parmesan cheese, divided
6 small boneless skinless chicken breast halves pounded thin
1 egg
10 Ritz crackers, crushed into crumbs
1 1/2 cups spaghetti sauce, warmed
Directions
Preheat oven to 375F.
Mix cream cheese, spinach, 1 cup of mozzarella cheese and 3 Tbsp of parmesan cheese until mixed well. Spread onto each chicken breast. Start at one end of each chicken breast, roll chicken up tightly. Secure with wooden toothpicks, if you want.
Beat egg in small dish. Mix remaining parmesan and cracker crumbs in another small dish. Dip chicken roll in egg, then roll in crumb mix. Place in baking dish spreayed with cooking spray, seam side down.
Bake for 30 min, or until chicken is done. While chicken rollups are baking, heat spaghetti sauce. When chicken is finished baking, remove tooth picks, and top with spaghetti auce and remaining mozzarella cheese.
Each rollup is a serving. This recipe makes 6 servings total.
