Ingredients

    1 cup wholemeal self-raising flour
    1 cup desiccated coconut
    1/2 cup sugar
    1 teaspoon vanilla
    rind of 1 lemon
    100g melted butter
    400g tin skim condensed milk
    juice 2 lemons plus grated rind of 1
    4 passionfruit (or 1 can)

Directions

1: Combine flour, coconut, sugar, vanilla, rind and melted butter and place in slice tin
2: Cook at 180oC till brown (about 10 mins)
3: Mix remaining ingredients and pour into prepared base
4: Cook a further 10 minutes at 160oC
5: Cool in pan then slice

Makes approx 18 pieces
