This is a double recipe. If you are eating alone, you can wrap the other half in foil and stick in in the fridge. To reheat, you just pop it in the oven! I use leftovers to make these in a snap! Ingredients

1/2 cup egg beaters
1/2 cup sauteed onions and red peppers
1/2 cup diced lean ham
1/2 cup chopped cooked potato (think leftovers)
1 tbsp smartbalance omega
1 slice 2% cheddar cheese
Directions
Preheat oven to 400, put spread in a small 8 inch iron skillet over med-high heat until melted and sizzling, reduce heat to med. Meanwhile, set cheese aside and mix remaining ingredients. Pour egg mixture into hot pan, cook until almost set, cut cheese slice into shreds and arrange on top. Bake until set and cheese is bubbly.
