    1 pound dried black eyed peas (washed, soaked overnite and drained)
    1 bell pepper, chopped
    1 med onion, chopped
    1 c. chopped celery
    1 c. chopped green onions (scallions)
    2-3 tsp liquid smoke (or to your taste)
    1 tsp garlic powder
    1 tsp tobasco sauce or to your desired hotness
    salt and pepper to taste


Wash peas, soak overnite and drain. Place all ingredients except hot sauce and salt/pepper in large pot. Cover with water and cook 1 hr or till peas tender. May need additional water during cooking time. Add tobasco and salt and pepper to taste. This is good by itself, a side dish or with brown rice.

Makes about 10 1-cup servings
