Introduction

This is a quick and easy supper dish. This is a quick and easy supper dish.
Number of Servings: 2

Ingredients

    4 oz whole wheat pasta
    4 oz shrimp
    4 cups fresh spinach
    1 large tomato, chopped
    3 T pesto sauce
    3 T crumbled feta cheese
    2 T finely chopped pecans

Directions

Cook pasta according to directions.
Defrost shrimp by running under warm water (if frozen). Heat further in a large frying pan.
Add spinach, then hot pasta, tomato and pesto.
Stir until spinach is just wilted.
Plate onto 2 plates and top with cheese and pecans.
Drain pasta.
