Number of Servings: 4


    8 oz. uncooked soba noodles
    1/3 c. water or vegetable stock
    4 T. peanut butter
    1 T. fresh minced ginger
    1 T. lite soy sauce
    2 T. honey
    2 cloves garlic, minced
    1 T. crushed red pepper flakes (more or less to taste)


Cook noodles according to package directions (omitting any salt and fat called for); drain. Whisk remaining ingredients together (microwave mixture for 15-30 seconds if peanut butter is not dissolving well). Toss pasta with sauce.

Goes well with steamed veggies, seafood, chicken, or pork.

    Yummy, and so fast and easy to make! I added a tablespoon of rice wine vinegar, and added a bit more honey. Sooooo good! - 11/5/10

    This was really good and very simple to make! I modified it a bit to my taste: reduced the honey to just 1 Tbsp and added about 1 tsp of rice vinegar. I've played around with various peanut recipes and this one was one of the best! - 4/12/10

  • Had this for Christmas dinner. Easy and delicious. Skipped the pepper flakes as most of the family doesn't like spicy foods. Will make this again. - 12/27/12

  • Fair warning: WICKEDLY PEANUT-BUTTERY. But I'm a huge fan of peanut butter, so it went over very well with this household. Soba has such a nutty flavor - so, it went well with sauce. Thank yoU! - 9/23/12

  • I make something very similar - my daughter requests it all the time. I add 1/2 cup green onions or cilantro and and a few raw peanuts as a garnish. I also top with grilled Chicken breast for a complete dinner. Thanks for posting this. Now I don't have to enter everything! - 4/28/12

  • OMG I loved this! I did tweek it a little though. I used PNB & Co's The Heat Is On PNB & left out the pepper flakes. I also used ground ginger & garlic powder to make a smoother sauce. I topped it with honey roasted sliced almonds & sunflower seeds. It was Yummy!!!! - 8/15/08

  • I liked how spicy this actually was! The peanut butter seemed a bit overwhelming to me, however, and I think I would adjust that amount the next time. Good recipe though! - 5/26/08
