Introduction

My staple Asian-inspired noodle side. My staple Asian-inspired noodle side.
Number of Servings: 4

Ingredients

    8 oz. uncooked soba noodles
    1/3 c. water or vegetable stock
    4 T. peanut butter
    1 T. fresh minced ginger
    1 T. lite soy sauce
    2 T. honey
    2 cloves garlic, minced
    1 T. crushed red pepper flakes (more or less to taste)

Directions

Cook noodles according to package directions (omitting any salt and fat called for); drain. Whisk remaining ingredients together (microwave mixture for 15-30 seconds if peanut butter is not dissolving well). Toss pasta with sauce.

Goes well with steamed veggies, seafood, chicken, or pork.

    This was really good and very simple to make! I modified it a bit to my taste: reduced the honey to just 1 Tbsp and added about 1 tsp of rice vinegar. I've played around with various peanut recipes and this one was one of the best! - 4/12/10

    Had this for Christmas dinner. Easy and delicious. Skipped the pepper flakes as most of the family doesn't like spicy foods. Will make this again. - 12/27/12

    Fair warning: WICKEDLY PEANUT-BUTTERY. But I'm a huge fan of peanut butter, so it went over very well with this household. Soba has such a nutty flavor - so, it went well with sauce. Thank yoU! - 9/23/12
