Introduction

Thick chicken soup made with red capsicum (red peppers) and sweet potatoes. Best done in crock pot! Thick chicken soup made with red capsicum (red peppers) and sweet potatoes. Best done in crock pot!

Ingredients

    Sweet Potato, 800 gram
    Campbells Low Salt Chicken Stock 1 Litre
    Chicken Breast, no skin, 500 grams
    capsicum, 150 gram
    Garlic, 2 cloves

Directions

Peel sweet potato and cut into rough chunks. Dice capsicum and slice finely the shallots. Mince garlic. Dice chicken into small pieces. Place all ingredients including stock into crock pot. Cook on high for 4 hours. Puree the mix in a food processor.. be careful not to burn yourself!
Enjoy with some low fat parmesan cheese or a dollop of low fat sour cream (not considered in calorie count!)
