Introduction

To make a lower fat version, I sometimes substitute soymilk for the 1/4 cup oil. To make a lower fat version, I sometimes substitute soymilk for the 1/4 cup oil.

Ingredients

    1/3 cup sliced almonds (unsalted)
    3/4 lb silken tofu (refridgerated is best, but all I had at the time was the vacuum packed Mori-Nu, it works pretty well)
    3-4 cloves of garlic
    3 Tblsp lemon juice
    1 Tblsp capers
    3-4 tsp caper brine
    1/2 teaspoon mustard powder (Dijon mustard is also a nice variation)
    1 tsp sugar (optional- use this if you use water, olive oil or an unsweetened soymilk)
    salt and pepper to taste

Directions

Grind the almonds and put in airtight container to mix in later.
Blend the tofu, garlic and soymilk (or oil or water) until creamy. Add in the lemon juice, mustard powder and spices and blend until well mixed.
Whisk in the ground almonds and chill at least 30 minutes (but several hours is optimal)
Makes about 2 cups of dressing.
This is a great, quick go-to dressing that has lots of room for innovation.
