Ingredients

    2 cups hard-frozen peach slices
    1 cup evaporated nonfat milk
    1 cup fat free half and half
    1 cup maltitol crystals or splenda
    1 tsp vanilla extract
    2 oz peach schnapps
    1 tbsp cinnamon
    1 small pinch xanthan gum

    2 cups diced fresh peaches

Directions

Combine all ingredients EXCEPT the cinnamon and xanthan gum in a blender and blend thoroughly. While blender is running, slowly add the cinnamon and then the xanthan gum.

Add mixture to your ice cream maker and freeze according to manufacturer's directions.

In the last 1 - 2 minutes of churning, add the diced fresh peaches to the mix.

NOTE: A tiny pinch of xanthan gum is all that's needed in this recipe. It helps keep the ice cream from freezing too hard and is a "fat substitute" in terms of adding the smooth and creamy texture to the resulting ice cream. The peach schnapps also help keep the mix from freezing too hard and add a lovely taste.

Additional note: If you wish to use all fresh peaches, make sure you start by slicing and hard-freezing 2 cups of them - the frozen consistency kick-starts the process in the blender and results in a much better ice cream.
