Introduction

Tastes better than Olive Garden and waaaaaay healthier! Tastes better than Olive Garden and waaaaaay healthier!
Number of Servings: 8

Ingredients

    - 1 pound uncooked Italian turkey sausage links
    - 1 TBSP Oscar Meyer Real Bacon Bits (or pieces)
    - 2 Minced Garlic Cloves (from a jar)
    - 2 cans Swawson Natural Goodness Fat Free Chicken Broth
    - 2 cups diced potatoes
    - 2 cups thinly sliced fresh kale
    1/3 cup fat free half&half
    - 4 cups water

Directions

1) Remove casings from sausage
2) Brown sausage then set aside to cool
3) Saute' bacon and garlic in separate in soup pan (careful to not burn garlic)
3) Add water, broth and potatoes to bacon and garlic
4) Bring contents of soup pan to boil, reduce heat, cover/simmer for 20 minutes (or until potatoes are tender)
5) Add kale, cream and sausage to soup pan
6) Heat through (but do not boil)
7) Salt and pepper to taste

Makes about 8 servings

    Very, very good. I added more kale because I just love kale and it's nutrients are excellent. I was kind of nervous about the bacon bits, but they were great. I will definitely be making this again and again. Thanks! - 4/11/10

    Excellent recipe! I've never had it from Olive Garden, but this soup was very flavorful, a bit rich from the 'fake' cream, and hearty! I used 2 strips of smart bacon (couldn't taste it, will just leave it out next time) and no-sodium chicken bullion + water. This will be a regular in our diet! - 12/18/10

    So good! I used Gimme Lean sausage style instead of regular sausage and bacon. I enjoyed it and so did my boyfriend, but the kids didn't care for it. Trying it again with chicken sausage this time. - 10/14/10
