Number of Servings: 6

Ingredients

    1 10 oz package frozen spinach, thawed and excess water squeezed out
    6 eggs
    1/4 cup matzo meal
    1 tbsp vegetable oil
    pepper to taste
    onion salt to taste
    1/2 tsp nutmeg

Directions

Preheat broiler.

In a large bowl, lightly beat eggs, then add spinach, matzoh meal and spices.

In a heavy bottom oven safe skillet (I used cast iron), heat vegetable oil over medium heat. Add egg mixture and cook until bottom is set. Transfer skillet to broiler and finish cooking until the top is set and slightly golden brown.

Remove from broiler and turn out skillet onto platter. Cut and serve. Makes six pieces.

Garnish with herbs as desired.

    Very Good
    Great, I used only Tbsp of oil and that was plenty. Plan on freezing the rest and using for a quick breakfast - 4/22/10
