Ingredients

    6 large eggs (3 w/o yoke)
    4.5 oz - Ribeye steak, grilled
    1/3 c - diced tomato, raw
    1/4 c - chopped green onion, raw
    1/8 c - diced mushroom, canned
    1/2 c - shredded cheddar cheese

Directions

Beat eggs with wisk until well mixed and pour into medium sized greased skillet over medium heat. Cook until the bottom and around the edges is solid. Then add steak, tomato, green onion, mushroom, and cheese. Continue to cook until cheese melts then, using a spatula, flip one side over the other and allow leftover egg to run out and cook. Remove from skillet, cut in half and serve.

Makes 2 servings.

    I used fresh mushrooms, added green bell pepper, sauteed the veggies first, poured the eggs in over that...then added the steak and cheese...a real treat! Use round or flank steak for economy...still good. - 5/13/08

    Incredible!
    Needed to use up some left-over steak and came across this recipe. It was VERY good. I added a few extra mushrooms and some salt and pepper.. but otherwise cooked it as written. Very good and quite filling - was definitely enough for two. Thank you! - 6/23/12
