Cheesy Mash Cauliflower

Submitted by: MOMMYBUTTERFLY

Introduction

This is a great low-cal alternative to mash potatoes. Surprisingly I think it tastes similar to the point you won't miss them even! Cauliflower with cream cheese & cheddar cheese to top. Delicious! I used Laughing Cow garlic & herb cheese instead of cream cheese and still got the creaminess. I'll definitely be making this again. - 9/8/10

  • Very tasty, but I found neither the blender or food processor were adequate. I think mashing and mixing like potatoes would probably be better. I'll definitely be making it again. - 4/1/13

  • This is amazing! I used reduced fat garden vegetable flavor cream cheese, and used a potato masher and left the cauliflower chunky. The lauching cow cheese sounds good, will try that next time! - 11/3/12

  • My duaghter and I love this. I used only 1/4 cup of reduced fat cheddar cheese to save some calories and it was still delicious. I also omitted the paprika because I wasnt sure my daughter would like it. Very good! - 3/6/10

  • Thanks for this recipe! My husband and I (both cauliflower haters) loved this. I knew I would but he wasn't sure. Then he told me he would eat this instead of mashed potatoes anytime. I used a 16oz size bag of frozen cauliflower but kept all other ingredients the same. - 1/31/10

  • This was so good! My husband is a meat and potatoes kind-of-guy and he said this dish might not replace mashed potatoes, but it was an excellent alternative! I only had Fat Free cheddar cheese on hand so I used that, but it was awesome! - 1/21/10
