Introduction

This is a great low-cal alternative to mash potatoes. Surprisingly, I think it tastes similar to the point you won't miss them even! Cauliflower with cream cheese & cheddar cheese to top. Ingredients

    1 small head Cauliflower, chopped into small pieces
    4 Tbsp Philadelphia 1/3 Less fat cream cheese
    1/2 tsp Salt
    1/4 tsp White Pepper
    1/2 Cup low-fat shredded cheddar cheese
    2 Tbsp Parmesan Cheese
    1/2 tsp Paprika
    Garlic cloves (optional, I tried it with the garlic and was too much garlic tastes fine without it!)

Directions

Boil Cauliflower till tender. Process cream cheese in food processor or blender. Add in cauliflower and garlic blend until smooth. Add in Parmesan, salt and pepper.

In a small 1 QT greased pan pour in cauliflower mixture. Sprinkle paprika and shredded cheddar on top. Bake at 350 for 20 mins or until bubbly.

Makes 4 servings.

    Delicious! I used Laughing Cow garlic & herb cheese instead of cream cheese and still got the creaminess. I'll definitely be making this again. - 9/8/10

    I used lowfat sour cream instead of cream cheese since i didnt have any on hand. Also used a little bit of smoked cheddar. excellent!! - 10/19/09
