Ingredients

    Black Beans, 2 cups
    Dark Red Kidney Beans, 1 cup
    Sweet potato, 1.5 cup, cubes
    Peanut butter, 1 tbsp
    Sweet bell peppers, 2 peppers, large, chopped - yellow and red are best
    Onions, raw, 1 cup, chopped
    Petite Cut Diced Tomatoes, 1.5 cup
    1 small can tomato paste
    Molasses, 2 tbsp
    Salt, 1 tsp
    Sweet Corn, 1 can, drained (I like the white and yellow crispy kernels)
    Chili powder, 2 tbsp
    Cumin, 1 tbsp
    Pepper, red or cayenne, 1 tsp (or hot sauce to taste)
    Fresh Garlic, 6 cloves, minced - or a couple tablespoons
    1-2 cups Water - enough to almost come over the top of the stuff in the pot
    ** you can add more other veggies, too, like portabella mushrooms, butternut squash instead of sweet potato, etc.

Directions

Throw everything into a slow cooker and cook on high 5-6 hours.

Add hot sauce to taste.

    I make this every sunday and portion into containers for the week. IT IS FANTASTIC!!! I skip the molasses and tomato paste. I use the whole can of corn and beans, but wash them first in a strainer. I also add 2 cubes of chicken broth for just a little more flavor. - 1/21/10

    This was very good. I never thought of making a sweet chili before-I did add some jalapeņos to my own bowl, but that just made the contrast all the better. This is a good recipe, and I'll make it again. - 11/14/10

    Great recipe! I didn't have the corn so I used canned yellow hominy and it was awesome! We like it better than corn. - 12/19/09
